Five O Four
Honduran-Creole cooking from a bright little truck at The Long Goodbye on Manor Rd: seafood gumbo, boudin pastelitos, baleadas and crawfish wontons.

504: two homes, one number
Five O Four is a food truck focused on Honduran-Creole culture and cuisine, inspired by Honduras and South Louisiana. The goal: introduce local communities to modern takes on traditional recipes.
The name comes from two port cities sharing the same number: 504 is the New Orleans area code and Honduras' country code.
Chef Grace Aguilar was born in New Orleans to Honduran parents. She spent summers walking to the pulperia in Puerto Cortes and cooking with her Tía Berna, while watching her godmothers run their New Orleans Italian restaurant. After Hurricane Katrina, her family moved to Lafayette, where she grew up around the bold flavors of Cajun and Creole cooking.
New Orleans is home to the largest Honduran-American community in the U.S. Five O Four brings that table to Austin, with quality ingredients and hospitality that feels like time spent with family and friends.
The truck celebrated its grand opening at The Long Goodbye on Manor Rd on Sept 24, 2026.

Good to know
Fun facts Chef Grace shared on the event pages.
- Pastelitos – A corn dough pastry usually filled with ground beef and potatoes. Like Chef Grace, the tradition moved to New Orleans, so Five O Four fills theirs with Louisiana-style boudin.
- Baleadas – A popular street food and national dish of Honduras from the north coast, especially La Ceiba: a flour tortilla filled with refried beans, crema and queso duro.
- Why "Honduran Creole"? – Honduras has a significant Afro-Honduran population, mainly Garifuna and Bay Island Creoles, with a distinct Afro-Caribbean identity.
- Red beans on Monday – In New Orleans, red beans and rice was the Monday wash-day meal: Sunday's leftover ham bone flavored the beans, which simmered while the laundry got done.
- Sauce pack – In Southwest Louisiana, a sauce pack is a rich gravy of smoked meats browned in a cast iron pot, with the caramelized drippings (the graton) making a brown gravy, often for big gatherings.
- The platter – In Louisiana, "platter" likely means the plate lunch of South Louisiana and Acadiana: meat and gravy over a starch, popular since the late 19th century.
- Crawfish – Crawfish are more closely related to the Maine lobster than to other kinds of lobster in the ocean.
- The French Quarter – Also called the Vieux Carré, it's the oldest neighborhood in New Orleans, founded by the French in 1718.
- Puerto Cortes – Chef Grace's family is from Puerto Cortes, a small port town in Honduras filled with rich history.
